Artichoke Pesto

Makes 8 servings (3 tbsp per serving)

Ingredients

  • ½ cup canned artichokes, drained
  • ½ avocado
  • ¼ cup fresh basil
  • 3 tbsp pine nuts
  • 1 clove garlic
  • 1 tbsp lemon juice
  • Dash of salt
  • 1 oz grated Parmesan cheese

Preparation

  1. Combine all ingredients in a food processor or blender.
  2. Mix until smooth.
  3. Serve on whole grain pasta and enjoy!
