Artichoke Pesto
Makes 8 servings (3 tbsp per serving)
Ingredients
- ½ cup canned artichokes, drained
- ½ avocado
- ¼ cup fresh basil
- 3 tbsp pine nuts
- 1 clove garlic
- 1 tbsp lemon juice
- Dash of salt
- 1 oz grated Parmesan cheese
Preparation
- Combine all ingredients in a food processor or blender.
- Mix until smooth.
- Serve on whole grain pasta and enjoy!
