Asian Vegetable Stir-Fry

Makes 4 servings (1 cup per serving)

Ingredients

  • 1 Tbsp. canola oil
  • 1 cups broccolini, chopped
  • 1 cup red peppers, chopped
  • 1 cup zucchini, chopped
  • 1 cup carrots, chopped
  • 1 garlic clove, minced
  • 1 Tbsp. ginger, minced
  • 1 tsp. chilli flakes
  • 1 Tbsp. reduced sodium soy sauce
  • 1 Tbsp. water
  • 1 tsp. lime juice

Preparation

  1. Heat oil on medium high heat.
  2. Add all vegetables and let sautee for 5-8 minutes.
  3. Add garlic and ginger, and continue cooking for another 2 minutes.
  4. Add the rest of the ingredients and let the sauce thicken for 2 minutes.
  5. Serve and enjoy!
