Avocado Yogurt Pudding

Makes 1 serving

Ingredients

  • ¼ ripe medium avocado 
  • ¾ cup nonfat vanilla Greek yogurt
  • ¼ cup nonfat plain Greek yogurt
  • ¼ cup milk (1%)
  • ½ tsp vanilla extract 
  • ¼ cup granola (or sliced almonds) 
  • cinnamon, to taste

Preparation

  1. Combine avocado, yogurt, milk and vanilla in a blender. Purée until smooth. 
  2. Transfer mixture into two jars, dividing equally.
  3. Cover and and refrigerate overnight.  Just before serving, sprinkle with granola and cinnamon.
  4. Serve and enjoy!
