Baked Pumpkin Oatmeal

Makes 12 servings (1/2 cup per serving)

Ingredients

  • 1 apple, cored and cut into small chunks 
  • 1 ½ cups of milk 
  • 3 ½ cups old-fashioned (rolled) oats 
  • 1 ½ cups pureed pumpkin 
  • 2 eggs 
  • 2 Tbsp. butter, melted 
  • 2 tsp. vanilla 
  • 1 Tbsp. cinnamon 
  • 2 tsp. baking powder 
  • 1 tsp. ground ginger 
  • ½ tsp. ground nutmeg 
  • ½ tsp. ground allspice 
  • ¼ tsp. salt 
  • 2 Tbsp. brown sugar 

Preparation

  1. Preheat oven to 350°F. 
  2. Blend apple with milk in blender until no chunks remain. 
  3. In a large mixing bowl, combine apple mixture, oats, pumpkin puree, eggs, butter, vanilla, cinnamon, baking powder, ginger, nutmeg, allspice, and salt. 
  4. Spread mixture into a greased 9” x 13” pan. Sprinkle brown sugar over top and bake for 20­‐25 minutes. 
  5. Serve warm, topped with vanilla Greek yogurt!
