Baked Pumpkin Oatmeal

Makes 12 servings (½ cup per serving)

Ingredients

  • 1 apple, cored and cut into small chunks
  • 1½ cups of milk (1%)
  • 3½ cups old-fashioned (rolled) oats
  • 1½ cups canned pure pumpkin
  • 2 large eggs
  • 2 tbsp butter, melted
  • 2 tsp vanilla
  • 1 tbsp cinnamon
  • 2 tsp baking powder
  • 1 tsp ground ginger
  • ½ tsp ground nutmeg
  • ½ tsp ground allspice
  • ¼ tsp salt
  • 2 tbsp brown sugar
  • 1 cup vanilla Greek Yogurt (2%), optional

Preparation

  1. Preheat oven to 350°F.
  2. Blend apple with milk in blender until smooth.
  3. Transfer mixture to a large bowl. Add oats, pumpkin, eggs, butter, vanilla, cinnamon, baking powder, ginger, nutmeg, allspice, and salt. Stir to combine.
  4. Spread mixture into a greased 9 x 13 inch pan. Sprinkle evenly with brown sugar and bake for 20­‐25 minutes.
  5. Serve warm. Top each serving with a generous tablespoon of vanilla Greek yogurt.
