Berry Zucchini Oatmeal Muffins

Makes 12 servings (1 muffin per serving)

Ingredients

  • 2 cups whole wheat flour 
  • ½ cup brown sugar 
  • ¼ cup unsweetened apple sauce 
  • ½ cup large flake oats 
  • 1 Tbsp. ground flaxseed 
  • 2 tsp. baking powder 
  • ½ tsp. salt 
  • 2 tsp. cinnamon 
  • 1 cup milk 
  • 2 Tbsp. melted butter 
  • 2 eggs 
  • 1 cup zucchini, grated and excess water removed 
  • 1 cup frozen berries 

Preparation

  1. Heat oven to 375°F. 
  2. Line a muffin tin with muffin liners. 
  3. Combine flour, sugar, oats, flaxseed, baking powder, cinnamon, and salt in a bowl and mix well. 
  4. In a separate bowl, combine apple sauce, milk, melted butter, eggs and zucchini and mix well.  
  5. Pour the wet ingredients into the dry ingredients and mix. 
  6. Gently fold in the berries. 
  7. Pour into muffin tin and cook for 25-30 minutes.  
  8. Serve and enjoy!
