Black Bean Chipotle Burger

Makes 4 servings (1 patty per serving)

Ingredients

  • 1 cup black beans, cooked 
  • ½ cup brown rice, cooked 
  • ½ cup brown lentils, cooked 
  • 2 tsp. Maggi seasoning 
  • 1 tsp. oregano 
  • 1 tsp. granulated onion 
  • 1 tsp. granulated garlic 
  • ½ tsp. pepper 
  • ¼ tsp. chipotle spice 
  • ¼ tsp. cumin 
  • Pinch of salt 
  • ¼ cup mushrooms 
  • ¼ cup walnuts 

Preparation

  1. Preheat oven to 375°F. 
  2. In a blender or food processor, puree black beans, brown rice, brown lentils, and all spices and seasonings until consistency is a smooth paste. Place in medium bowl and set aside. 
  3. In the meantime, place mushrooms on a pan and roast for 30 minutes. Remove from oven and let cool. 
  4. Finely chop cooled mushrooms and walnuts and add to black bean mixture. Mix by hand to combine. 
  5. Form into 4 patties. Pan fry lightly on both sides for color. Bake at 375°F for 20 minutes. 
  6. Serve and enjoy!
