Makes 2 servings (2 pancakes per serving)
- ¼ cup plain Greek yogurt
- ½ ripe banana
- ½ cup rolled oats
- 1 egg
- 2 Tbsp. milk
- ½ tsp. baking powder
- 1 tsp. vanilla
- ¼ cup blueberries
- Combine all ingredients, except blueberries, into a blender or food processor and blend until smooth.
- Stir in the blueberries.
- Pour 3 Tbsp. of batter on to a preheated skillet or fry pan, with a small amount of cooking oil or spray.
- Cook 3−5 minutes on each side.
- Serve and enjoy!
