Blueberry Banana Pancakes

Makes 2 servings (2 pancakes per serving)

Ingredients

  • ¼ cup plain Greek yogurt  
  • ½ ripe banana 
  • ½ cup rolled oats 
  • 1 egg 
  • 2 Tbsp. milk 
  • ½ tsp. baking powder 
  • 1 tsp. vanilla 
  • ¼ cup blueberries

Preparation

  1. Combine all ingredients, except blueberries, into a blender or food processor and blend until smooth. 
  2. Stir in the blueberries. 
  3. Pour 3 Tbsp. of batter on to a preheated skillet or fry pan, with a small amount of cooking oil or spray. 
  4. Cook 3−5 minutes on each side.  
  5. Serve and enjoy!
