Blueberry Breakfast Cookie

Makes 16 servings (1 cookie per serving)

Ingredients

  • 2 ½ cups whole rolled oats 
  • 2 medium ripe bananas 
  • 1 cup natural nut butter 
  • 1/3 cup honey 
  • 1 tsp. vanilla 
  • 2 tsp. cinnamon 
  • ½ tsp. salt 
  • ½ cup chopped pecans 
  • 1 cup fresh blueberries 

Preparation

  1. Heat oven to 325°F. 
  2. Combine banana, nut butter, honey and vanilla in a bowl and mix well.   
  3. Stir in the rolled oats, cinnamon and salt and mix well. 
  4. Fold in the blueberries and pecans, being careful not to squish the blueberries. 
  5. Line two baking sheets with parchment paper and scoop 8 cookies per tray. Shape the cookies into the size and shape you want. 
  6. Bake for 15-20 minutes. 
  7. Serve and enjoy!
