Blueberry Chia Seed Jam

Makes 8 servings (1/4 cup per serving)

Ingredients

  • 3 cups frozen blueberries
  • ¼ cup water
  • 1 Tbsp. maple syrup
  • 3 Tbsp. chia seed
  • ½ lemon, juice

 

Preparation

  1. Combine blueberries, water and maple syrup into a pot and bring to a boil.
  2. Reduce heat and simmer until starting to thicken, ~10 minutes.
  3. Try to mush some of the berries while you stir.
  4. Remove from heat and stir in the chia seeds.
  5. Allow to sit for 5- 10 minutes.
  6. Stir in the lemon juice, pour into a jar and refrigerate.
  7. The jam lasts 10 days in the fridge.
  8. Serve and Enjoy!
