Breakfast Berry Crisp

Makes 6 servings (1/2 cup per serving)

Ingredients

  • 4 cups berries, fresh or frozen (thawed) 
  • 3 tbsp cornstarch 
  • 1 tsp vanilla 
  • 1 cup rolled oats 
  • ¼ cup whole wheat flour 
  • 1 tsp cinnamon 
  • 2 tbsp pure maple syrup 
  • 1 tbsp butter, melted

Preparation

  1. Preheat oven to 350°F. 
  2. Combine berries with cornstarch and vanilla in a small bowl. Stir gently until combined. 
  3. In a separate bowl combine oats, flour, cinnamon maple syrup and butter.  Mix well.   
  4. Pour the berries into a 5 x 5 baking dish then spread the oat mixture on top. 
  5. Bake for 30 minutes. 
  6. Can serve hot or cold. Top with a dollop of Greek yogurt.
