Chicken Fajitas

Serves 6 (1 tortilla per serving)

Ingredients

  • 1 lbs. chicken breast, sliced
  • 5 cups bell peppers, red, orange and green, sliced
  • 1 cups onion, sliced
  • ½ tbsp. cumin
  • 1 Tbsp. chili powder
  • 2 tsp. paprika
  • 1 Tbsp. oregano
  • 1 Tbsp. canola oil
  • 1 lime
  • 6 tortilla wraps

Preparation

  1. Heat oven to 400 °F.
  2. Combine all of the spices into a small bowl and mix well.
  3. Place the chicken, peppers and onion into a large bowl with the canola oil.
  4. Sprinkle the spice mix over the chicken, peppers and onions and mix until well coated.
  5. Spread over a baking sheet covered in parchment paper.
  6. Bake for 20 minutes.
  7. Remove from heat and drizzle lime juice over the chicken and vegetables.
  8. Can prepare the chicken and vegetable with spice mix ahead of time and freeze for up to 3 months.
  9. Garnish with cilantro, sour cream or avocado.
  10. Serve and enjoy!
