Chickpea Noodle Soup

Makes 4 servings (1 ½ cup per serving)

Ingredients

  • 1 tsp. vegetable oil
  • 1 cup onion, diced
  • 1 cup carrot, peeled and diced
  • 1 cup celery, diced
  • 1 clove garlic, minced
  • 1 tsp. parsley
  • 1 tsp. thyme
  • 1 tsp. basil
  • 1 tsp. oregano
  • 1 bay leaf
  • 6 cups vegetable stock
  • 1 can chickpeas, low sodium, drained and rinsed
  • 1 cup noodles, uncooked

 

Preparation

  1. Heat oil in a pot, add onions, carrots and celery.
  2. Cook for 5 minutes, then add garlic, parsley, thyme, basil, oregano and bay leaf.
  3. Cook for 2 minutes, then pour in vegetable stock.
  4. Bring to a boil, then reduce to a simmer. Cook for 5 minutes, then add noodles.
  5. Allow the noodles to fully cook, then pour in chickpeas.
  6. Serve and Enjoy!
