Coconut Pancakes

Makes 2 servings (2 pancakes per serving)

Ingredients

  • 1 tsp. coconut oil 
  • 1 medium banana 
  • ½ cup unsweetened coconut 
  • ¼ cup of egg whites 
  • 1 whole egg 
  • 1 tsp. vanilla extract 
  • 1 tsp. cinnamon

Preparation

  1. Blend ingredients together in a blender or food processor. 
  2. Heat coconut oil on a non-stick pan and cook pancakes for 2-3 minutes on each side until golden brown and cooked through. Enjoy!
