Coconut Pancakes

Makes 2 servings (2 pancakes per serving)

Ingredients

  • 1 tsp coconut oil 
  • 1 medium banana 
  • ½ cup unsweetened shredded coconut 
  • 1 large egg 
  • 2 large egg whites (about 1/4 cup)
  • 1 tsp vanilla extract 
  • 1 tsp cinnamon 
  • Coconut oil, for cooking

Preparation

  1. Add all ingredients to a blender or food processor. Purée until smooth. 
  2. In a medium non-stick pan, heat coconut oil over medium heat. Cook pancakes until golden brown and cooked through, about 2 – 3 minutes per side . Enjoy!
