Greens with Hard-Boiled Egg

Makes 1 serving

Ingredients

  • 3 cups greens mix 
  • ¼ cup cucumber, sliced 
  • ¼ cup grape tomatoes, sliced in half 
  • 1 Tbsp. red onion 
  • 1 egg 
  • 1 tsp. olive oil 
  • 1 Tbsp. balsamic vinegar 
  • ½ tsp. Dijon mustard 
  • ½ tsp. salt 
  • ½ tsp. pepper

Preparation

  1. Place the egg in a pot of cold water. 
  2. Bring the water to a boil.  Once its boiling, reduce heat to a simmer and set a timer for 10 minutes. 
  3. Once 10 minutes is up, remove the egg from the water and submerge it into ice water. 
  4. Combine all of the vegetables into a bowl and mix well. 
  5. Combine the olive oil, vinegar, Dijon mustard, salt and pepper in a bowl and mix well. 
  6. Drizzle over the mixed vegetables.  
  7. Top with the hard-boiled egg. 
  8. Serve and enjoy!
