Grilled Eggplant Rounds

Makes 4 servings (1 eggplant round per serving)


  • 1 large globe-shaped eggplant 
  • 1 ⅓ Tbsp. olive oil 
  • Salt and pepper to taste


  1. Slice eggplants into rounds, about ½ inch thick. 
  2. Brush both sides with olive oil and lightly season with salt and pepper. Make sure there is enough oil on the rounds to prevent sticking to the grill. 
  3. Grill on both sides until eggplant is tender. 

Grilled eggplant rounds make a great bun option for turkey, chicken, beef or vegetarian patties!
