Makes 4 servings (1 eggplant round per serving)
- 1 large globe-shaped eggplant
- 1 ⅓ Tbsp. olive oil
- Salt and pepper to taste
- Slice eggplants into rounds, about ½ inch thick.
- Brush both sides with olive oil and lightly season with salt and pepper. Make sure there is enough oil on the rounds to prevent sticking to the grill.
- Grill on both sides until eggplant is tender.
Grilled eggplant rounds make a great bun option for turkey, chicken, beef or vegetarian patties!
