Makes 4 servings (1 eggplant round per serving)
- 1 large globe-shaped eggplant, sliced into 1/2 inch thick rounds
- 4 tsp olive oil
- Salt and pepper to taste
- Preheat barbecue over medium heat.
- Brush both sides of eggplant rounds with oil and season with salt and pepper. Make sure there is enough oil on the rounds to prevent sticking to the grill.
- Grill on both sides until eggplant is tender, about 3 – 5 minutes per side.
Tip: Grilled eggplant rounds make a great bun option for turkey, chicken, beef or vegetarian patties!
