Jamaican Black-Eyed Pea Curry

Makes 4 servings (1 ½ cup per serving)

Ingredients

  • 1 tsp vegetable oil
  • 1 cup onion, diced
  • 4 clove garlic, minced
  • 1 habanero pepper, minced (seeded if you want less heat)
  • 2 Tbsp. fresh thyme
  • 2 tsp. cumin
  • 1 tsp. mustard powder
  • 1 tsp. ground coriander
  • 1 tsp. fenugreek powder
  • ½ tsp. allspice
  • 1 tsp. ground ginger,
  • 2 tsp. turmeric
  • 1 ½ cup carrots, peeled and diced
  • 1 ½ cup cauliflower, chopped small
  • 2 cups canned black eyed peas, no salt added, drained and rinsed
  • 2 cups water
  • 1 can coconut milk
  • 1 lime, juiced

 

Preparation

  1. Combine all ingredients into a slow cooker except the lime juice.
  2. Cook on low for 8 hours.
  3. Finish with lime juice.
  4. Serve and Enjoy!
