Lemon Garlic Broccolini

Makes 4 servings (1 cup per serving)

Ingredients

  • 2 cloves garlic, peeled
  • 4 cups broccolini 
  • 4 tsp butter 
  • 1 tsp lemon juice 
  • 1 tsp lemon zest 
  • Dash of salt

Preparation

  1. Preheat oven to 350°F. Place garlic with a drop of olive oil into tightly wrapped tin foil and bake for 10-15 minutes. 
  2. Steam broccolini until tender-crisp, about 3 – 5 minutes. Remove from heat and set aside. 
  3. Heat butter in a frypan over medium heat. Add broccolini, roasted garlic, lemon juice, zest and salt. Cook for about 3 – 5 minutes. 
  4. Serve and enjoy!
