Lemon Garlic Broccolini

Makes 4 servings (1 cup per serving)

Ingredients

  • 2 cloves garlic 
  • 4 cups broccolini 
  • 4 tsp. butter 
  • 1 tsp. lemon juice 
  • 1 tsp. lemon zest 
  • Dash of salt

Preparation

  1. Preheat oven to 350°F. Place garlic with a drop of olive oil into tightly wrapped tin foil and bake for 10-15 minutes. 
  2. Steam the broccolini until almost fully cooked. Remove from heat and set aside. 
  3. In a pan over medium heat, melt butter. Add broccolini, roasted garlic, lemon juice, zest and salt. Cook for about 5 minutes. 
  4. Serve and enjoy!
