Mashed Maple Squash

Makes 4 servings (1/2 cup per serving)

Ingredients

  • 1 large acorn squash, halved and seeded  
  • 1 Tbsp. pure maple syrup  
  • 4 tsp. salted butter  
  • ½ tsp. ground cinnamon  
  • Small dash of nutmeg  

Preparation

  1. Preheat oven to 400°F. Grease a baking pan and place squash halves cut-side down on the greased pan.  
  2. Bake for about 40-50 minutes until the flesh of the squash is soft.  
  3. Scrape the flesh into a mixing bowl. Add syrup, butter, cinnamon, nutmeg and mash together until mixture is combined.  
  4. Serve and enjoy!
