Mashed Maple Squash

Makes 4 servings (½ cup per serving)

Ingredients

  • 1 large acorn squash, halved and seeded  
  • 1 tbsp pure maple syrup  
  • 4 tsp salted butter  
  • ½ tsp cinnamon  
  • Dash nutmeg  

Preparation

  1. Preheat oven to 400°F. Place squash halves cut side down on a lightly greased pan.  
  2. Bake until tender when pierced with a fork, about 40 – 50 minutes.  
  3. Scrape the flesh into a medium bowl. Add syrup, butter, cinnamon, nutmeg and mash until mixture is smooth.  
  4. Serve and enjoy!
