Mediterranean Frittata 

Makes 4 servings (3/4 cup per serving)


  • 8 eggs 
  • 1 tsp. canola oil 
  • ½ tsp. salt 
  • 4 cups spinach, rough chop 
  • 1 cup grape tomatoes, quartered 
  • ¼ cup feta, crumbled


  1. Heat oven to 350°F. 
  2. Whisk together the eggs with salt.  
  3. Heat an oven safe pan on medium heat and add the oil. 
  4. Add the spinach to the pan and let wilt. 
  5. Add tomatoes and cook for 2 minutes. 
  6. Add the eggs into the pan and mix well. Cook on medium until the eggs begin to set. 
  7. Sprinkle feta cheese on top and place the pan into the oven. 
  8. Cook for 8−10 minutes.  
  9. Serve and enjoy!

*Meal prep tip: Make ahead of time and wrap tightly in cling wrap for up to three months. To re-heat, thaw to room temperature and bake at 350°F for 10 minutes.
