One Pan Maple Salmon Dinner

Makes 4 servings (1 salmon fillet, 1/2 cup sweet potatoes and 1 cup asparagus per serving)

Ingredients

  • 4 (3 oz.) fillets of salmon 
  • 2 cups sweet potato, sliced thin 
  • 4 cups asparagus 
  • 2 tsp. olive oil 
  • 1 tsp. garlic salt 
  • 1 Tbsp. lemon juice 
  • 1 Tbsp. maple syrup

Preparation

  1. Heat oven to 425°F. 
  2. Place the sweet potato flat onto a baking sheet lined with parchment paper. 
  3. Drizzle ⅓ of the olive oil onto the sweet potatoes. 
  4. Bake for 10 minutes. 
  5. Remove the pan and add salmon and asparagus.  
  6. Mix the remaining olive oil, garlic powder, lemon juice and maple syrup. Drizzle the mixture over the pan and mix. 
  7. Bake for 15 minutes. 
  8. Serve and enjoy!
