Parsley Pesto Penne

Makes 4 servings (3/4 cup of pasta and 2 Tbsp. sauce per serving)

Ingredients

  • 1 cup fresh parsley (loosely packed)  
  • 2 Tbsp. grated parmesan  
  • 1 garlic clove  
  • 1 oz. walnuts  
  • 1 Tbsp. lemon juice  
  • 2-3 Tbsp. water  
  • 1 Tbsp. olive oil  
  • ¼ tsp. of salt  
  • ½ tsp. pepper  
  • 2 cups (6 oz.) dry penne pasta  

Preparation

  1. Combine all ingredients but the pasta into a food processor and mix well.  
  2. Cook pasta according to its packaging and toss in blended pesto sauce.  
  3. Serve as a part of a balanced meal and enjoy!
