Potato Salad

Makes 10 servings (½ cup per serving)

Ingredients

  • 4 cups baby red potatoes, halved
  • ½ cup chopped celery
  • 2 tbsp thinly sliced green onions
  • 2 tbsp Dijon mustard 
  • 2 tsp honey 
  • 1 cup plain Greek yogurt 
  • 2 tbsp cider vinegar 
  • 1 tbsp olive oil 
  • 2 tsp onion powder 
  • 2 tsp garlic powder 
  • ½ tsp cayenne pepper
  • ½ tsp salt
  • ½ tsp freshly ground pepper

Preparation

  1. Cook potatoes in boiling water until tender. Drain well and cool completely.
  2. Transfer cooled potatoes to a large bowl and add celery and green onions. 
  3. In a small bowl, whisk together mustard, honey, yogurt, vinegar, oil, onion powder, garlic powder, cayenne, salt and pepper. Pour mixture over potatoes, stirring to coat.
  4. Serve and enjoy!
