Protein Pancakes

Makes 4 servings (2 pancakes per serving)

Ingredients

  • 3 large eggs
  • 1 cup cottage cheese
  • 1 tsp vanilla extract
  • ½ cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tsp cinnamon

Preparation

  1. Combine eggs, cottage cheese and vanilla in bowl and mix well.
  2. In a separate bowl combine flour, baking powder, cinnamon and salt.
  3. Pour the flour mixture into the egg mixture and mix just until combined.
  4. Heat a frypan or griddle over medium heat and add 1 tsp canola oil or a thin layer of cooking spray to the pan.
  5. Pour 1/4 cup batter onto the pan and cook for 2-3 minutes on each side. Repeat with remaining batter.
  6. Serve and Enjoy!
