Protein Pancakes

Makes 4 servings (2 pancakes per serving)

Ingredients

  • 3 large eggs
  • 1 cup cottage cheese
  • 1 tsp vanilla extract
  • ½ cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tsp cinnamon
  • 1 tsp canola oil

Preparation

  1. Combine eggs, cottage cheese and vanilla in a large bowl and mix well.
  2. In a separate bowl, whisk together flour, baking powder, salt and cinnamon.
  3. Add flour mixture to the cottage cheese mixture and stir just until combined.
  4. Heat oil in a frypan or griddle over medium heat.
  5. Pour ¼ cup batter per pancake into pan and cook until pancakes are golden brown, about 2 – 3 minutes per side. Repeat with remaining batter.
  6. Serve and Enjoy!
