Summer Citrus Salad
Makes 4 servings (3/4 cup per serving)
Ingredients
- 1 grapefruit, peeled and pith removed
- 1 orange, peeled and pith removed
- 1/4 cup red onion, diced
- 2 cup fennel, sliced thin
- 1 avocado, sliced
- 1 tsp. shallots, minced
- 1 tsp. orange zest
- 1 Tbsp. orange juice
- 1 tsp. ginger, minced
- 2 Tbsp. white wine vinegar
- 1 Tbsp. olive oil
- 1 tsp. pepper
Preparation
- Combine all ingredients into a large bowl and toss well.
- Serve and enjoy!
