Vegetarian Quesadillas

Makes 4 servings

Ingredients

• ½ cup onion, diced
• 1 cup bell pepper, diced
• 1 tsp. vegetable oil
• ¾ cup black beans
• ¼ cup frozen corn, thawed
• 1 lime
• 1 tsp. cumin
• ¼ tsp. cayenne
• 1 Tbsp. chili powder
• 1 tsp. onion powder
• 1 tsp. garlic powder
• 3/4 cup cheddar cheese, shredded
• 4 flour tortillas

 

Preparation

1. Heat vegetable oil in a fry pan and add onions and peppers. Allow to cook until starting to soften.
2. Add the black beans, corn, cumin, cayenne, chili powder, garlic powder and onion powder. Mix well and allow to cook for 5 minutes. (add 1 -2 tsp. of water if too dry)
3. Remove from heat and add juice of 1 lime.
4. Add ¼ of filling into each tortilla and fold in half.
5. Put into a fry pan and cook for 4-5 minutes on each side.
6. Flip and repeat. Serve with avocado, salsa or sour cream.
7. Serve and Enjoy!
