Vegetarian Quesadillas

Makes 4 servings

Ingredients

• ½ cup onion, diced
• 1 cup bell pepper, diced
• 1 tsp vegetable oil
• ¾ cup black beans
• ¼ cup frozen corn, thawed
• 1 lime
• 1 tsp cumin
• ¼ tsp cayenne
• 1 tbsp chili powder
• 1 tsp onion powder
• 1 tsp garlic powder
• 3/4 cup cheddar cheese, shredded
• 4 flour tortillas

 

Preparation

1. Heat vegetable oil in a fry pan and add onions and peppers. Allow to cook until starting to soften.
2. Add the black beans, corn, cumin, cayenne, chili powder, garlic powder and onion powder. Mix well and allow to cook for 5 minutes (add 1 - 2 tsp of water if too dry).
3. Remove from heat and add juice of 1 lime, stirring to combine.
4. Divide vegetable mixture evenly between 4 tortillas and top with shredded cheese, dividing equally. Fold quesadillas in half.
5. Return frypan to medium-low heat. Working in batches, cook quesadillas for 4-5 minutes on each side.
6. Repeat with remaining quesadillas. Serve with avocado, salsa or sour cream.
