Watermelon Salad

Makes 4 servings (¾ cup per serving)

Ingredients

  • 3 cups chopped seedless watermelon
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest
  • ½ tsp fresh ground black pepper
  • Dash salt
  • ½ cup crumbled feta cheese
  • 2 tbsp fresh chopped mint

Preparation

  1. Add watermelon, lime juice, lime zest, salt and pepper in a medium bowl. Stir gently to combine.
  2. Sprinkle with feta cheese and fresh mint.
  3. Serve and enjoy!
