Makes 4 servings ( 3/4 cup per serving)
- 3 cups watermelon, chopped
- Juice and zest of 1 lime
- 1 tsp. black pepper
- Dash of salt
- ½ cup feta, crumbled
- 2 Tbsp. fresh mint, chopped
- Gently combine watermelon with lime juice, zest and salt in a medium bowl.
- Top with fresh mint and feta cheese.
- Serve and Enjoy!
