Watermelon Salad

Makes 4 servings ( 3/4 cup per serving)

Ingredients

  • 3 cups watermelon, chopped
  • Juice and zest of 1 lime
  • 1 tsp. black pepper
  • Dash of salt
  • ½ cup feta, crumbled
  • 2 Tbsp. fresh mint, chopped

 

Preparation

  1. Gently combine watermelon with lime juice, zest and salt in a medium bowl.
  2. Top with fresh mint and feta cheese.
  3. Serve and Enjoy!
