Asian Noodle Salad

Makes 8 servings (1 ½ cup per serving)

Ingredients

  • 4 cups cooked whole-wheat spaghetti noodles (el dente)
  • 4 cups broccoli slaw
  • 2 cups carrot, peeled and grated
  • ¼ cup green onion, chopped
  • 1 cup edamame beans, cooked and shelled
  • 2 Tbsp. olive oil
  • 1 Tbsp. rice vinegar
  • 1 Tbsp. honey
  • 2 Tbsp. creamy all-natural peanut butter
  • 1 Tbsp. low-sodium soy sauce
  • 1 Tbsp. Sriracha
  • 2 tsp. ginger, peeled and minced
  • 1 clove garlic, minced
  • ¾ cup unsalted peanuts
  • ¾ cilantro, chopped

 

Preparation

  1. Combine cooked pasta, broccoli slaw, green onion, edamame beans and carrots together and mix well.
  2. Combine olive oil, vinegar, honey, peanut butter, soy sauce, Sriracha, ginger and garlic together and mix well.
  3. Pour over the noodles and mix well.
  4. Garnish with peanuts and cilantro, mix again.
  5. Place in the fridge for 30 minutes.
  6. Serve and Enjoy!
