Blueberry Broccoli Salad

Makes 4 servings (1 1/2 cup per serving)

Ingredients

  • 3 cups broccoli, chopped  
  • 2 cups spinach 
  • ½ cup red onion, diced 
  • 1 cup blueberries 
  • ¼ cup dried cranberries 
  • 4 Tbsp. pumpkin seeds 
  • 4 Tbsp. feta, crumbled 

Dressing: 

  • ½ cup Greek yogurt 
  • 1 Tbsp. Honey 
  • 1 Tbsp. poppy seeds 
  • 1 tsp. white vinegar 
  • 1 tsp. lemon juice 
  • 1 tsp. Dijon mustard 
  • 1 tsp. onion powder 
  • 1 tsp. garlic powder 
  • 1 tsp. black pepper 
  • 1 tsp. salt

Preparation

  1. Combine all dressing ingredients into a bowl and mix well.  If it’s too thick, add 1 Tbsp. of water. 
  2. Combine broccoli, spinach, blueberries, onion dried cranberries and pumpkin seeds in a bowl and toss in the dressing. 
  3. Garnish with feta cheese.  
  4. Serve and enjoy!
