Cabbage Mushroom Stir-Fry

Makes 2 servings (2 cups per serving)

Ingredients

  • 1 tbsp. canola oil 
  • 2 tbsp. chopped scallions 
  • 2 minced garlic cloves 
  • 1 tbsp. minced ginger 
  • 1 tsp. red chili flakes 
  • 5 cups shredded cabbage 
  • 1 cup sliced mushrooms 
  • 1 tbsp. low sodium soy sauce 
  • 2 tbsp. water 
  • 1 tbsp. lime juice

Preparation

  1. Heat oil in a pan add the scallions, garlic, ginger and chili flakes. 
  2. Let cook for 1-2 minutes, then add mushrooms and cabbage. 
  3. Allow to cook for 5-10 minutes. 
  4. Add soy sauce and water and allow the sauce to thicken for 4 minutes. 
  5. Serve and enjoy!
