Plum Yogurt Cheesecake Muffins

Makes 18 muffins (1 muffin per serving)

Ingredients

  • 2 cups whole wheat flour 
  • ¾ tsp. baking powder 
  • ¾ tsp. baking soda 
  • ¼ tsp. salt 
  • 2 cups 0% vanilla Greek yogurt 
  • 250g regular or light cream cheese 
  • ⅔ cup skim milk or water 
  • 1 tbsp. vanilla extract 
  • 1 tbsp. coconut oil (melted) 
  • 1 tbsp. white chia seeds (or 1 large egg) 
  • 2 plums, pitted and diced

Preparation

  1. Preheat oven to 350F. Grease 18 muffin cups. 
  2. In a large mixing bowl, mix together flour, baking powder, baking soda, and salt. 
  3. In a high powered blender or food processor combine together Greek yogurt, cream cheese, milk, vanilla and chia seeds. 
  4. Fold wet ingredients into dry ingredients until just combined. Fold in fresh plums. 
  5. Portion mixture into greased muffin tin and bake in preheated oven for 20-30 minutes or until toothpick comes out clean. Makes 18 moist, creamy but tangy muffins!
