Quinoa Fruit Salad

Makes 6 servings (1 1/2 cups per serving)

Ingredients

  • 1 cup blueberries
  • 12 strawberries, diced
  • 1 mango, diced
  • 2 tbsp mint leaves, chopped
  • ¼ cup hemp hearts
  • ¼ cup walnut halves
  • 1 cup quinoa, cooked
  • 3 cups plain 0% Greek yogurt
  • 4 tbsp real maple syrup

Preparation

  1. Mix together blueberries, strawberries and mango in a large bowl. Add mint leaves, hemp hearts, walnuts and quinoa.
  2. In a separate medium bowl, mix Greek yogurt and maple syrup. Pour over the fruit and quinoa right before serving.
  3. To prolong the shelf life of the salad, keep yogurt mixture separate and add ½ cup to each separate serving.
