Scrambled Garlic Eggs with Basil and Tomato

Makes 1 serving

Ingredients

  • 2 large eggs 
  • 2 tbsp milk (1%)
  • 1 clove minced garlic
  • ½ cup diced seeded tomato
  • 2 tbsp fresh chopped basil
  • 1 tsp canola oil

Preparation

  1. In a small bowl whisk together eggs and milk. Add garlic, tomato and chopped basil leaves.  
  2. Heat oil in a medium fry pan over medium heat. Add egg mixture and cook, stirring gently, just until set.
  3. Serve and enjoy!
